They say breakfast is the most important meal of the day. It is also the easiest meal to skip and if you do eat breakfast you're probably eating the same thing almost every day. These breakfast cookies are just the thing to get you out of your breakfast rut. With whole oats, fruit, and nuts all rolled into one they are pretty much a complete breakfast in hand held form - perfect on-the-go.
Tip: Add the nuts half way through forming the cookies so that you have some without nuts for kids. They are definitely toddler approved as well. Though I suggest doubling the recipe, you won't be disappointed ;-)
Breakfast Cookie Recipe (makes about 24 small cookies)
Tools:
1 bowl - yes just 1 :-)
1 wooden spoon or spoon
baking sheet line with parchment paper
1/2 + 1/4 cup measuring cups
1/2 teaspoon
Ingredients:
1 ripe large banana
2 cups whole rolled oats
3/4 cup almond butter
1/4-1/2 cup chopped pecans or walnuts (or leave them out for kids)
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
pinch of salt
1 cup frozen blueberries (do not thaw)
Directions:
1. Preheat oven to 175C (350F) and line baking sheet with parchment paper.
2. Combine all ingredients in bowl adding in the blueberries last.
3. Form cookies by the tablespoonful and place on cookie sheet.
4. Bake for about 20 minutes until lightly browned on the sides. Cool on a wire rack.
