Raspberry Olive Oil Brownies

The other day I went in the kitchen with a recipe in mind but as usual I totally changed it up. I like to have a recipe in front of me just so that I remember the basics - flour, sugar, oil, baking powder etc. I tried making black bean brownies also last week but they weren't fudgy enough to my liking. So as I usually do I open up all the cupboards and the freezer looking for something unique to add to my brownies and had this idea to add raspberries. The world is divided into two types of people those that like berries and raisins in their chocolate and those that don't. Berries and chocolate are the perfect combination if you ask me. The raspberries in these brownies really bring out the chocolate flavor even with a relatively minimal amount of sugar. I also used olive oil which is a little bit of a healthier fat than the other options for baking.


Finally I have found my go-to brownie recipe I have yet to try this with any other flour other than white. I assume a whole wheat or spelt flour will make them a bit drier but I think it could be an option especially if you do half. Remember a recipe is not set in stone, feel free to change things but stick to the backbone of the recipe as mentioned above. If you do follow this recipe you will get fudgy cakey brownies that are not too sweet and have a unique tang because of the raspberries.

Raspberry Olive Oil Brownies

Tools:

1 bowl (yes, just one :-))

1 cup and 1/2 cup measuring cups

1 and 1/2 teaspoon measuring spoons

whisk or fork

Ingredients:

3/4 cup olive oil

1 cup flour

3 eggs at room temperature

1.5 cups sugar

1 cup cocoa powder

1/2 teaspoon salt

2 teaspoons vanilla extract

Optional: chocolate chips or chopped chocolate bar

Directions:

1. preheat oven to 175 C (350F) and grease a 9x13 inch pan or line with parchment paper

2. Combine all ingredients in bowl and mix well with a whisk or fork. Pour into prepared pan.

3. Bake in the oven for about 25-30 minutes until a toothpick inserted in the center comes out almost clean. Check every couple of minutes so that they don't burn.
